BioNutrition Research Area

The UNM GCRC Bionutrition Area has both a Metabolic Kitchen and clinical nutrition staff and is thus able to provide both food and nutrition services for all GCRC-approved protocols.

The Metabolic Kitchen has the capability to provide specialized meal service unique to the research setting. The kitchen is staffed seven days a week and prepares and serves all GCRC research patients' meals: regular, special, inpatient, outpatient, and off-site. All food and non-food items are procured directly through local vendors, independently of the hospital dietary department.

The UNM GCRC dietitians perform a variety of clinical nutrition services as well as body composition testing and indirect calorimetry measurements. Assistance is available to help set up the nutrition component of prospective protocols, and to analyze nutrition/body composition data for publication. Services available through our unit include but are not limited to the following:

Metabolic Kitchen

  • Regular meals

  • Nutrient-controlled diets
  • In-house calorie counts
  • Weighed diets (Ohaus electronic balances)
  • Therapeutic diets (ADA, renal, etc.)
  • Preparation of specialized foods/formulas
  • Inpatient, outpatient and off-site meal service

Clinical Nutrition Services

  • Nutrition assessments
  • Subject diet instruction
  • Nutrient intake assessment (24 hr recall, food, frequency, diet history, subject-kept food diaries)
  • Computer analysis of intake FIAS Millennium 1.0 (Food Intake Analysis System)
  • Design of special diets for Metabolic Kitchen
  • Design nutrition component of protocols
  • Education of UNM nutrition undergraduates, graduates, and dietetic interns
  • Indirect calorimetry
  • Anthropometric measurements (skinfold measurements, hip-waist ratio, others)
  • Bioelectrical impedance analysis
  • Exercise Testing/Monitoring
  • Dual Energy X-ray Absorptiometry (DEXA). Patient Radiation Dose Exposure
