Chile PLUS: Cutting vegetables

The Food service component encourages serving a variety of fruits and vegetables, whole grains, and low-fat dairy in childcare meals and snacks. During each module, the same target fruit and vegetable that children are tasting in the classroom are incorporated into the center’s menu at least four times each. CHILE Plus provides training and technical assistance to food service staff to encourage policy and behavioral changes to food purchasing and menu planning. These changes include switching to unflavored 1% or nonfat milk, switching from white rice to brown rice, serving whole wheat tortillas, or rinsing and draining ground beef.

In addition to what they serve in meals and snacks, food service staff collaborate with center staff to facilitate completion of nutrition lessons in the classroom. Between the classroom lessons and the meals and snacks provided, children are provided with at least 8 exposures to each target fruit and vegetable at the center.
